Spicy Pork (매운삼겹살)

I can't believe that I haven't put up my spicy pork recipe yet! THIS is the one that made me fall in love with Korean food (and them my wife... in that order). It's spicy, a little sweet and it really just makes my heart sing. Seriously. It's magic.

Eat it with rice, or get crazy and use it to make pork tacos.

That's it. Here's the recipe:

INGREDIENTS:

(good for about 2.5 lbs of meat)

1/2 of a medium onion

1 TBSP of garlic

3 TBSP of soy sauce

2 TBSP of gochujang

2 TBSP of sesame oil

2 TBSP of mirin or a sweet wine

2 TBSP of Sugar (I usually use apple or Korean pears instead)

2 TBSP gochugaru (add more for spicier)

1/2 TBSP black pepper

2.5 lbs of sliced pork belly

Green onion and sesame seed for garnish

DIRECTIONS:

  1. Blend onion and garlic in a blender with Korean pear or 1 large apple.

  2. Pour into bowl and add the rest of the marinade (non-pork) ingredients and mix.

  3. Mix in pork belly and make sure everything is coated.

  4. Allow to marinate overnight or at least a few hours.

  5. Cook in a hot pan with sliced onions, or grill.

  6. Top with green onions and sesame seed.
